Marinade, Sauce
3 lg cloves garlic
1 scotch bonnet chile (stemmed, seeded, minced)
2 T Madras curry
6 scallions (chopped)
3/4 c. Roasted Garlic Oil or pure olive oil
3 T apple cider vinegar
1/2 c fresh orange juice
1/2 c. fresh lime juice
1 tsp. salt
1. Combine the garlic, chile, curry powder, and scallions in a bowl.
2. In a small saucepan, heat the oil until warm but not hot. Pour it into the bowl and whisk to combine. Let stand for 15 minutes.
3. Whisk in the cider vinegar and orange and lime uices. Refrigerate until needed.
